Diet During COVID: The influence of Stress and Loss of Income on individuals’ Fruit and Vegetable Intake (FVI)
Summary
The purpose of this research is to examine the changes in individuals’ Fruit and Vegetable Intake (FVI) during the 2020/2021 coronavirus pandemic. Expected changes are a decrease of FVI and these are theorized to be caused by increases in pandemic induced stress and loss of income as a result of the pandemic. With the use of first wave data from the UCL COVID study, logistic regression analyses have been performed to test the possible relationship between stress, loss of income and FVI. No significant evidence has been found for a decrease in FVI. Significance has been found on the associations between FVI and stress and FVI and loss of income.
